Santi Mina scored in the 17th minute befor Sergio Postigo pulled Levante level in the 18th at Mestalla.
In the 65th minute Coke had a goal unfairly ruled out for a foul when the referee adjudged Gaya to have been fouled - but it was his team-mate Gabriel who knocked him.
Valencia broke away and Luciano Vietto struck to put the hosts ahead, before Dani Parejo scored a late penalty - also controversial, because Zaza won it despite appearing to foul his marker Rober, rather than the other way around.
